Kaleen's CauliBroccoli Chicken Alfredo



2 C cubed chicken, cooked (Kaleen cooks with butter, onion powder, and garlic salt)
1-2 C Broccoli, chopped and cooked to al dente
1-2 C Cauliflower, chopped and cooked to al dente
4 C prepared noodles (usually penne)
1- 1 ½ C shredded cheddar cheese

Kaleen's Sauce Ingredients:
1C Milk
1 ½ Butter
½  Tbsp Flour
3 Tbsp Parmesan Cheese
½ tsp Garlic Salt
1 tsp Salt
Pepper to taste

Directions:
1. Preheat the oven to 375 F.
2. Cube and cook chicken with butter and spices.
3. Boil cauliflower and broccoli, then drain.4 Cook noodles according to directions on package. If needed noodles can stay in the hot water after cooked for up to 5 minutes.



I use this Alfredo sauce


This is Kaleen's Alfredo sauce:
In a small saucepan melt butter, then blend flour into the melted butter and cook for 30 seconds. SLOWLY add milk (if milk is added too fast the butter will harden up), then add the Parmesan cheese, then salt, garlic salt, and pepper, stirring constantly until smooth and thickened a little bit. If it thickens too much, adjust it by whisking in more milk.

Place cauliflower, broccoli, noodles, chicken and half of the cheddar cheese in a 9 x 13 baking dish. Mix in the sauce and top with the rest of the cheddar cheese. Place in the oven for 10 minutes and then broil until the cheese is nice and bubbly.

Yummy Crock Pot Sloppy Joes

Ingredients
2 lb. ground beef
1 medium onion, chopped
2 (8 oz) cans tomato sauce
1 (10 3/4 oz) can condensed tomato soup
1/2 cup packed brown sugar
1/8 cup ketchup
1 1/2 Tbsp worcestershire sauce
1/2 Tbsp dry mustard
1/2 Tbsp prepared mustard
3/4 tsp chili powder
1/2 tsp garlic powder
hamburger buns
cheese, optional

Instructions
In a skillet, brown ground beef and onion together until beef is cooked. Drain off fat.
Place beef in the slow cooker and add remaining ingredients.
Stir until well combined.
Cover and cook on low for 4 to 6 hours.
Serve on buns with a slice of cheese on each bun.

Nutella Cookies

chocolate lovers pay close attention. Although these have Nutella in them, the taste of Nutella in the cookie wasn't strong. I will probably add 1/4 tsp-1/2 tsp next time of hazelnut extract to give it more of a Nutella taste! They were still amazingly good if you are in need of a chocolate fix!


1 1/3 c. all-purpose flour
1/4 tsp. baking powder (I used cornstarch to make them softer and more chewy)
1/2 tsp. baking soda
1/2 tsp. salt
8 T. unsalted butter, room temperature
2/3 c. granulated sugar
1/3 c. light brown sugar
2/3 c. Nutella
1/2 tsp. vanilla extract
1 egg
3/4 c. chocolate chips

Mix together flour, baking powder, baking soda and salt and set aside.


Cream together butter, granulated sugar and brown sugar until light and fluffy. Mix in Nutella and vanilla extract. Mix in egg. Add flour mixture and mix until just incorporated. Add chocolate chips. Refrigerate dough for approximately one hour.


Drop approximately one tablespoon of dough 2 inches apart onto baking sheets. Bake at 350 for about 11 minutes until the edges look set. Cool on baking sheet for 5 minutes then carefully remove to cooling racks. Such yummy chocolatey goodness!

Yummy Chicken Salad


2 ( 12.5 oz) cans of chicken (or 3 cups diced cooked chicken)
3/4 cup light mayonnaise
1 cup red grapes, halved
1 green onion, diced
1 stalk celery, diced
1/2 cup diced apple
salt and pepper to taste
pecans or cashews, optional

In a bowl, combine the chicken, mayo, grapes, green onion, celery, apple, salt, and pepper.
Serve on rolls, bread, or croissants sprinkle with some cashews or pecans.

I added the nuts right in the mixture. 

Homemade Crunchwrap Supreme

large flour tortillas
round corn chips (I use three per wrap)
1 pound ground beef
1 package taco seasoning
  1 1/2 Tbsp taco seasoning
sour cream
nacho cheese (or shredded Mexican blend cheese)
shredded lettuce
diced tomatoes


Brown ground beef in a skillet, then add taco seasoning. Set aside.
Microwave the flour tortillas, one at a time (because they cool off quickly), for about 10 seconds to warm them up; this will make wrapping easier.
Lay out the flour tortilla. Spoon some of the seasoned beef into the center of the tortilla. Top with some nacho cheese, or shredded cheese if using shredded cheese place a dollop of sour cream on. Place the three corn chips in a triangle on top of the cheese/beef; spread a dollop of sour cream on top of it, then toss on some diced tomatoes and shredded lettuce.
Starting with the bottom of the tortilla, fold the edge up to the center. Continue doing this around the the tortilla until all of the tortilla is folded over, and the filling is entirely enclosed. If your filling isn't entirely enclosed and you have an open spot, simply some from another flour tortilla and place it on the exposed area, then wrap the tortilla again. 
Spray a frying pan with cooking spray.  Carefully place the Crunchwrap, seam-side down, in the pan. Cook on medium-low heat, for about 3 minutes, until the bottom is nice and brown. Flip it over and cook for another 3 minutes. mmmm


Mexican Chicken


4 boneless, skinless chicken breasts (frozen is fine)
1 cup salsa
1 can condensed cream of chicken soup
  or 1 1/2 Tbsp of home made taco seasoning
1/2 cup sour cream
6 tortillas
diced tomatoes
diced lettuce
cheese
salsa
sour cream 


Place chicken in the bottom of your slow cooker. Sprinkle taco seasoning on chicken. In a bowl, combine soup and salsa. Pour over chicken. Cook on high 4 hours. Shred chicken with two forks and stir in sour cream. Serve on tortillas as 'tacos' or as a salad meat. Really it is amazing!

Taco Seasoning

A little while back I made a new baby dinner for a close friend. Her little boy is VERY allergic to dairy products, so I was stumped on what to make them that would be good and wouldn't make their little boy sick. I settled on a taco braid. Did you know that the packets of taco seasoning have MILK in them?! What is with that? So I made my own. I found somewhere online, I love it!

1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 teaspoon ground cumin
1 teaspoon sea salt
1 teaspoon black pepper

mix and place in an air tight container. Not too much salt, and we love it!

Grandma Jean's Taco Soup: One of Daddy's Favorites



Dump following ingredients into a crock pot:

1  lb hamburger   ---- browned with the onion
1/2 c chopped onion
16 oz can tomatoes with the liquid
16 oz can kidney beans with the liquid
16 oz can corn with the liquid
8 oz can of tomato sauce  -  i usually just use a big can of diced tomatoes if I don't have the sauce because I like chunks of tomatoes in it.
1 pkg of taco seasoning

Simmer for as long as you want.  I just throw it in my crock pot on low at noon and then eat it whenever

Serve with sour cream and grated cheese.

Grandma Jean's: Sweet & Sour Spareribs



Ingredients:
2 lbs spareribs
3/4 C sugar
1/2 C vinegar
1tsp salt.   I don't use that much.  I use about 1/4 tsp
2 Tbs of cornstarch.    Whoops.  I hope you have cornstarch.
2 Tbs lemon juice
2 Tbs ketchup
3 Tbs  soya sauce
2 C water
Brown ribs and drain.  Add sugar and brown again.  Pour on the vinegar and bring to a boil.  Mix together the lemon juice, ketchup, soya sauce, and salt.  Add to ribs.  Add water and boil for 30 minutes or longer if you want.  Thicken  by putting a couple of T of cornstarch in a dish and add a bit of water till it is like syrup.  Stir it into the ribs.

Fried Rice   This makes a lot so you may want to cut it in 1/2

4 C Minute Rice. 
1 lb bacon
1 large onion
1 tsp  Accent.this is msg isn't it??You could probably getaway without using this.
Soya sauce to taste.
1 bunch of green onions

Brown bacon and onion together.  Cook rice as directed on box.  Add rice to drained bacon and onion mixture.  Sprinkle accent and soya sauce on to taste.  Add chopped green onion just before serving.

Gourmet Peanut Butter Cupcakes



1 box (18 oz.) chocolate cake mix
1 cup Hellmann’s® or Best Foods® Real Mayonnaise
1 cup water
3 eggs
1 (12 oz bag) Reese’s miniature peanut butter cups, unwrapped
1 cup butter, softened
2 cups Creamy Peanut Butter
4 cups powdered sugar
6 Tablespoons milk, or more if needed

Preheat oven to 350. Line two 12-cup muffin pans with cupcake liners; set aside.
Beat cake mix, Hellmann’s® or Best Foods® Real Mayonnaise, water and eggs in large bowl with electric mixer on low speed 30 seconds. Beat on medium speed, scraping sides occasionally, 2 minutes. Scoop or spoon into prepared muffin cups.
Place one Reese’s peanut butter cup into the center of each cupcake.  Press the peanut butter cup into the batter so 2/3 of the peanut butter cup is covered with batter.  The peanut butter cup will sink further in the cupcakes as it cooks.
Bake 18 minutes or until toothpick inserted in centers comes out clean. Cool 10 minutes on wire racks; remove from pans and cool completely.
Place the peanut butter and butter into a large bowl.  Beat with a mixer until well blended
Add half the sugar and half the milk to the butter mixture.  Mix until blended.
Add the remaining sugar and milk.  Mix until blended and the beat with mixer for 3 minutes until nice and fluffy.  Add more milk if needed to received desired consistency.
Pipe frosting onto cooled cupcakes.  Cut remaining peanut butter cups in half.  Place 1 half on top of each cupcakes

SOOOOOO Good! Peanut butter heaven!

Easy Peasy Doughnuts



-cooking oil in either a deep fryer or a frying pan
-1 roll of Texas style biscuits (not the flaky kind)
- melted butter
-mixed sugar and cinnamon

cut a hold out of the middle of biscuit, place in hot oil until golden brown, then place into melted butter and then into sugar mixture. enjoy!

Denice's Pansit Bihon





Ingredients:
1 Package rice noodles
1 Cooked chicken breast or pork
1 small cabbage
4-5 celery sticks
1 package matchsticks carrots



1 chicken bouillon cube
1 Cup water
Soy sauce
1 small lemon or use lemon juice
vegetable oil
1 tsp. minced garlic

In a pot boil chicken or pork until tender.  when done, set aside broth and shred chicken or pork. (I shred the chicken in my kitchen aid for a few seconds).  (I have pre cooked chicken and I make two Cups of Chicken Broth.) In a medium size skillet, heat one tbsp vegetable oil and saute garlic and chicken together.  Add cut cabbage, cut celery, and carrots.  Add one fourth of a cup cup chicken broth and simmer for fifteen minutes.  Check vegetables occasionally, you don’t want them soggy.

In a big bowl, soak rice noodles in hot water for ten to fifteen minutes until tender, drain and then cut noodles with scissors. 

In a another pot, heat one tbsp  vegetable oil, half of a cup chicken broth, and half of a cup soy sauce.  Bring to boil, (I don’t add the chicken bouillon, I find it too salty) add chicken bouillon and dissolve, add rice noodles.  Stir occasionally.  If the noodles dry up add the remaining broth.  when noodles are done add in the cooked vegetables and mix well. 
Add lemon to noodles for more flavoring.

This fabulous recipe is from Tim’s wife Denice. We have to do it a bit different or it tastes too salty to me, although when Denice makes it it never is salty, go figure. This dish is amazing!

Yummy, Yummy Ribs




This is a pretty easy recipe, and although it takes a bit of time, it is well worth it!

Ingredients:
Pork Ribs
Your Favorite BBQ Sauce

place your ribs smothered in the BBQ sauce, wrapped in tinfoil, into a preheated oven of 300. Let cook for 3 hours, remove from tinfoil add a bit more BBQ sauce if you would like and then finish cooking on the Grill.

Deana's Pancakes with Pizazz!



2 C flour
2 tbsp sugar
1 tbsp baking powder
¼ tsp salt
2 eggs
¼ C vegetable oil
2 C Milk
½ tsp vanilla

Add Pizazz
¾ C cinnamon chocolate chips
¾ C blueberries/crushed raspberries or strawberries (don’t add whole)

Mix first eight ingredients and blend well. Add milk to consistency you like. Now add your chips and/or fruit to spice them up!

Corned Beef


- 3 lbs Corned Beef
- Seasoning Packed
- 1/8-1/4 C water
- French Style Baguette/Bread
- Cream Cheese
- Spiced Mustard

Place beef and water in crock pot, sprinkle spices . Cook on low for 6 to 8 hours. Cut into sandwhich style pieces. Cut French bread in thick slices and spread sauce (mixed cream cheese and spiced mustard) on top. Top with Corned Beef.

* For more kick add less cream cheese to sauce. If you are a wimp like me add more cream cheese.

Janet Shumway's Chicken Noodle Soup



*Boil Chicken Broth (from a can or tablets)
*Add Chicken pieces (I cook a few breasts shred them and then put them in the   mixture)
*Add chopped carrots
*Add chopped celery
*Add chopped onion
(Corn optional)
*Egg Noodles

Cook until vegetables are cooked

Cook egg noodles in a separate pot

Add egg noodles just before serving

If needed thicken soup with condensed Cream of Chicken

Carmelita




1 c. flour
1/2 tsp. baking soda
1 c. quick-cooking rolled oats
1/4 tsp. salt
3/4 c. brown sugar
3/4 c. melted butter

Filling:
1 c. milk chocolate pieces
3/4 c. caramel ice cream topping
 1/2 c. chopped pecans
3 Tbsp. flour

Combine the flour, oats, sugar, soda, salt, and butter. Press half of this crumb mixture into a greased 9x9 inch pan. Bake at 350* for 10 minutes. Remove from the oven and sprinkle in the filling mix. Sprinkle the remaining crumb mixture on top. Bake at 350* for about 15-20 minutes until golden brown. Cool. Best if chilled for 1-2 hours. Cut into bars. Yield: 16-20 bars. (Tip: A 12-ounce jar of caramel topping equals 1 cup).






**Robbie and Tiffany Hale came over for dinner one night and brought this for dessert, it is the most amazing dessert ever! Be warned it needs to be eaten with milk or ice cream because it is so rich!

Breakfast Egg Muffin





1 English Muffin
1-2 eggs
Slice of Breakfast Ham
Slice of Cheese
butter

Toast muffin in toaster, beat egg(s) in a microwave safe bowl, cook eggs in microwave for 30seconds to a minute depending on how many eggs you have. butter toasted english muffin place egg, ham and cheese on muffin.

Western Style Egg

2eggs
2 slivers of Green Bell Pepper, chopped
2 silvers of Red Bell Pepper, chopped
grated Cheese
pieced ham

Mix all ingredients in a microwave safe bowl. Place in microwave between 45 seconds and a minute. Lift egg and peer at bottom to be sure it has cooked all the way to the bottom. Then place on an English muffin with a slice of cheese and a slice of ham.

Western Style Eggs remind me of  High school going for breakfast with mom and dad to Subway.

BBQ Biscuits




Todd and I did Emealz for a bit when Corbyn was first born. Although Todd loved all of the meals, this was the only meal that made the Kashina cut.

Ingredients:
- 1 lbs of ground beef
- 1/2 - 2/3 C of BBQ sauce
- 1 package of large buttermilk style biscuits
- 1/2 C cheese

Brown hamburger, drain. Add bbq sauce, Mix together on low heat. grease a muffin tin, flatten individual biscuits and place them in each muffin tin. Add hamburger mixture to biscuits, place in oven 10-13 minutes (or just under the directions on the biscuit mix). Pull out add cheese, and place them back in the oven 5 minutes or until cheese is melted.

Baked Ziti




Ingredients
2 lbs ground beef/turkey
1/2 large onion diced
1 jar/can spaghetti sauce
1 pkg of Ziti
3 C shredded mozzarella cheese
1/2 grated parmesan cheese


Cook Ziti to al dente according to package instructions.
Cook the beef and onion in a medium sized skillet over medium heat. Pour off any fat. Stir hamburger and onion mixture with spaghetti sauce and 2 cups of mozza cheese. When noodles are done add them to the hamburger mixture, and mix well. Spoon mixture into a two inch 9x13 baking dish. Top with remaining mozza and Parmesan cheese. Cook at 350 until cheese is melted and noodles are hot. Enjoy!

**this dish freezes well, and works wonderfully for the ladies with new babies in the ward.

Whip Cream




Ingredients
1 C heavy cream
1 tsp vanilla
2 Tbsp Powder Sugar

Beat cream until stiff peaks are almost forming, add sugar and vanilla and continue to beat until stiff peaks form. enjoy!

Be sure to chill glass or metal bowl and mixing paddles at least 30 minutes prior to mixing.

I know it may be odd to have a recipe for this, but I was honestly 28 before I learned how to make whipped cream...mmm so good with raspberries, I think I will go have some right now!

White Chocolate Raspberry Cheesecake

there is nothing better than this cheesecake. I use Deana's crust for this, because I am not a big fan of the chocolate cookie crust.

Mom's Green Soup


























4 Large Potatoes, peeled and cubed
2-3 Whole Leek Onions, sliced
1 Small Bunch (5-6) Celery, pieced with the strings pulled out of them
1 Large Carrot (5-6 small ones) diced
3-4 Tbsp butter
Salt to taste

Place all vegetables into a large pot, just barely cover with water, boil until all vegetables are soft. Then puree using a hand held mixer, or use a blender. Add butter and continue to cook until heated through. Use salt to individuals taste. Serve with ‘homemade’ (IGA made) buns and real butter… hmmmm


Although I was a picky eater growing up I loved this soup. It is actually called Leek Onion Soup, but mom knew if she called it that none of us would eat it. She would (and still does) make this just for me!
