Chicken Tetrazzini




This makes a lot!!! So make sure you are either feeding an army or prepare to freeze it into thirds. The author of this claims it is freezer friendly I have a couple in the freezer to eat after baby boy #4 gets here, I will let you know.
Ingredients
·         1 (12 oz) pkg. spaghetti pasta
·         1 (14.5) oz can chicken broth
·         5-6 cups cooked chicken (I crockpot cook mine)
·         seasoning salt or garlic salt (to season chicken)
·         2 cans cream of chicken soup
·         2 cups sour cream
·         one carton fresh mushrooms, washed and sliced
·         ½ stick butter
·         2 TB Extra Virgin Olive Oil
·         3 cups grated cheddar (sharp is recommended)
·         ¾ cup freshly grated Parmesan cheese
·         freshly ground pepper
·         sea salt & freshly ground pepper to taste
·         paprika
Instructions
1.    Cook chicken. Chop and set aside.
2.    Slice and sauté mushrooms in Extra Virgin Olive Oil and butter until soft. Season with salt & pepper.
3.    Cook pasta until al dente. Drain, rinse with cold water, and set aside.
4.    Put soups and sour cream in large bowl; stir in can of chicken broth.
5.    Stir in mushrooms to the soup mixture, blending well.
6.    Add chicken, pasta, and cheddar cheeses. Stir until well combined and evenly blended.
7.    Spray aluminum pan(s) with Pam; spread tetrazzini in pan.
8.    Sprinkle parmesan and paprika on top of casserole.
9.    DO AHEAD: If freezing, stop here and freeze before cooking. If cooking, go to next step.
10. Bake at 350 degrees for 45 minutes to an hour, or until edges begin to bubble.

11. AFTER FREEZING, thaw overnight then place in the oven at 350 degrees for 45-55 minutes checking on it.

Kashina's Tater Tot Casserole

I don't call it 'Kashina's' because I necessarily love the dish, more because it is a mess of things I threw together when I couldn't find the original recipe three weeks after deciding I was going to make it. Todd really liked it though.



Tater Tots (I didn't measure, just enough to cover the bottom of the dish twice)
1 lbs Ground Beef
1/2 C Onion, diced
1 Can Corn
1 Can Cream of Mushroom Soup (I am sure you could use any cream soup)
3/4 C Milk

Cheese to sprinkle on top

Preheat oven via instructions for tater tots, mine was 400 degrees. Brown hamburger with onion, drain. Drain corn and add to hamburger, add can of soup then add milk. (I actually just filled the can to 3/4 full). Stir together on low heat until milk is fully incorporated and mixture is warm to hot. Place a layer of tater tots in a 9x9 or 9x13 baking dish (you will have extra meat if you use a 9x9) then place a layer of meat mixture, then top with another layer of tots. Place in oven, uncovered for 22-24 minutes. Take out of oven cover with as much or as little cheese as you like, place it back in until cheese is melted and bubbly. Around 10 minutes. Enjoy. Kind of a fast food approach to a shepherds pie. You could probably add a layer of tender carrots in there to make it more Shepherd pie-ish.

Janet Shumway's Chicken Noodle Soup



*Boil Chicken Broth (from a can or tablets)
*Add Chicken pieces (I cook a few breasts shred them and then put them in the   mixture)
*Add chopped carrots
*Add chopped celery
*Add chopped onion
(Corn optional)
*Egg Noodles

Cook until vegetables are cooked

Cook egg noodles in a separate pot

Add egg noodles just before serving

If needed thicken soup with condensed Cream of Chicken

Baked Ziti




Ingredients
2 lbs ground beef/turkey
1/2 large onion diced
1 jar/can spaghetti sauce
1 pkg of Ziti
3 C shredded mozzarella cheese
1/2 grated parmesan cheese


Cook Ziti to al dente according to package instructions.
Cook the beef and onion in a medium sized skillet over medium heat. Pour off any fat. Stir hamburger and onion mixture with spaghetti sauce and 2 cups of mozza cheese. When noodles are done add them to the hamburger mixture, and mix well. Spoon mixture into a two inch 9x13 baking dish. Top with remaining mozza and Parmesan cheese. Cook at 350 until cheese is melted and noodles are hot. Enjoy!

**this dish freezes well, and works wonderfully for the ladies with new babies in the ward.
