Sister Karen Daley's Puffed Corn Crack

This stuff is SO good it really should be outlawed! We took it on a trip to UT with us, and everyone who tried it wanted the recipe. Super good stuff!



Ingredients 
1 Stick of Butter melted
1 C Karo (light corn syrup)
2 C Sugar

Boil for six minutes then take off the heat and add

1 Can (14oz) Sweetened Condensed Milk

Add the mixture to 
3 bags of Puffed Corn

After I mixed it I set it out on wax paper no good! Just put it out on either a greased surface or a non stick surface. Break apart every ten minutes or so.

Then enjoy!

Chicken & Broccoli Stirfry

The kids and I really liked this dish, Todd was same old. He didn't LOVE it but he didn't hate it either. 
 Ingredients:
  • 1 pound boneless skinless chicken breast, cut into 1-inch pieces
  • 2 garlic cloves, finely chopped/ 1 tsp minced garlic
  • 2 teaspoons finely chopped ginger (we omitted this)
  • 1 cup chicken broth (I used about 1 1/2 C)
  • 3 tablespoons soy sauce
  • 2 teaspoons sugar
  • 2 cups broccoli florets
  • 2 teaspoons cornstarch

Instructions:

  1. Spray 12-inch nonstick skillet with cooking spray; heat over medium-high heat. Add chicken, garlic and ginger. Fry 2 to 3 minutes or until chicken is brown.
  2. Add 3/4 cup of the broth, the soy sauce and sugar. Cover and cook over medium heat 5 minutes, stirring twice.
  3. Add broccoli. Cover and cook about 5 minutes, stirring occasionally, until chicken is no longer pink in center and broccoli are crisp-tender.
  4. Mix cornstarch with remaining 1/4 cup broth; stir into chicken mixture. Cook, stirring frequently, until sauce is thickened. 
  5. I actually could have added more cornstarch, it wasn't as thick as I would have liked.

Healthy Spring Rolls

My boys actually ate these!



1 package spring roll pastry
1/2 lbs low fat beef mince (or turkey) (I used reg hamburger and threw it in the blender, worked great)
1 packet rainbow salad mix or make your own using broccoli stems, carrot and beetroot strips
1 tsp Chinese five spice powder (I couldn't find this so I used a package of fried rice seasoning)
3 tbs soy sauce
sweet and sour sauce

Step 1 – Remove spring roll wrappers from the freezer and allow to defrost.
Step 2 – Brown mince with fried rice seasoning, then drain fat
Step 3 – Add soy sauce and vegetables to mince and cook for a few minutes until vegetables have softened. (Add whole package, when they are soft they shrink a little)
Step 4 – Allow the mince to cool while you are separating the spring roll wrappers. It is a good idea to keep a clean moist tea towel on top of the wrappers to stop them drying out.
Step 5 – With a spring roll wrapper corner facing you, scoop a couple of tablespoons of filling across the pastry, leaving enough room for the sides to be folded in. Fold the side corners in and roll it up into a log form as tightly as you can. (I was a hot mess trying to do this, good luck!)

Step 6 – Heat a little olive oil in a non stick frying pan over medium heat and gently brown each side until golden and crunchy. Serve with sweet and sour sauce.

Canadian Eat-More Bars

While I was in Canada this last time I asked my Grandma Stone for her hot fudge recipe for ice cream. While I was at her house she couldn't find it, but she was sure that she hadn't thrown it away, so she gave me her recipe box and told me I could go through it! I found SO many treasures in that little silver box! I HAD to try this one first!

REAL Canadian Eat-More Bars

In a medium sized sauce pan melt:
1 C Chocolate Chips (I used milk chocolate, and they were a bit lighter than real Canadian Eatmores but                                          they still tasted super good!)
½ C Honey
Stir over low-medium heat (don’t burn your chocolate chips) until all chocolate chips are melted and mixed in with honey.

Melt in:
½ C Peanut Butter

Then add dry ingredients (I had pre mixed them into a small bowl for easy mixing in the sauce pan)
¼ C Roasted Sunflower Seeds
½ C Crushed Peanuts
½ C Wheat Germ 

Simmer until all ingredients are mixed. I simmered mine for about four minutes, stirring the entire time, and they turned out great! The longer you simmer the harder they will be! Place on a cookie sheet and roll out. Wait for them to cool a little bit, and then cut. I placed mine on wax paper and the wax paper stuck to them, so I would either do it straight on my cookie sheet next time or spray my wax paper with a bit of Olive Oil. ENJOY these!

I love my baby brother, every time we have this for dinner I think of my baby brother, Kelson! Corbyn also LOVES this dish, he will want it everyday for weeks!

Momma Roe's Brownies

These are by far the BEST brownies in the whole world (according to me) They are big a soft and although Kelson thinks that walnuts are gross I prefer them with walnuts! Yum, yum!
