Chopped Salad






 Chopped Salad

This was MONEY! Added bonus you can change this up any way you like!! 

This one was:

Bed of Lettuce 

Tomatoes

Cucumbers

5 slices of BF Ham

1 slice Cheese

1 pickle


Chop up until you get bite size pieces then add dressing and mix! 


I’ve also seen people put theirs on a sandwich 👍🏻


Calories 170 carb 2 protein 17 fat 10.5

*to make this lower fat either don’t put in the cheese or add a low fat option

Low Carb Pizza Lunch

 

Easy Low Carb Pizza

1 LC Tortilla 

1-2 TBsp Pizza Sauce

2-4 oz Ham

Mushrooms

1 oz Low Fat or zero fat cheese


I bake my at 400 for 10-12 minutes 👌🏻

Poppyseed Chicken



 Poppyseed Chicken

3-4oz Chicken

1 Laughing Cow Cheese (light)

1/4 C Plain Greek Yogurt

1/4 C Cream of Chicken Soup

1/4 tsp Poppyseeds

Salt, Pepper, Garlic Powder to taste


Top with 5 Ritz Crackers 


Cals- 372 C- 18 F-19 P-33


Bake 375 for 20 minutes 


Notes: I used rotisserie chicken in this and it made it really good! 

Dragon Fruit Bowl


 Kashina’s Dragon Fruit Bowl

These are my new found love! When we lived in Las Vegas, I loved a place called Nektar. They use fresh ingredients, and they are so good! Just recently a store moved into where we live, I was so excited! My first bowl was full and perfect, my second and third and fourth bowls were underfilled and not very good. If I’m spending $15 on a smoothie, it better be jampacked! So I decided to make my own, I am so glad I did! They are so dang good and a fraction of the cost! 

Ingredients

1 C frozen Dragonfruit 

1/2 C frozen peaches or mango etc 

1 C Sugar Free Mango from Minutemaid

1/4 C or less Cream* optional, but it give the base a creamy texture 

Blend and then top with: (really whatever you want)


Sliced bananas

Sliced strawberries

Granola (I just sprinkle a bit)

Drizzle of honey


This is amazing! Just writing this makes me want some! 

Crispy Chicken Crunches


 Crispy Chicken Crunches 

Put the following in a low carb/fat tortilla 


2-3 C Shredded Chicken

2 Laughing Cow Cheese

1/4 C Greek Yogurt

1/2 C green salsa (or any salsa)

1/2 tsp Fajita seasoning (I used Taco Ranch) 

1/2 C Shredded Cheese

Mix

  • I added two tsp of honey because this was so tart


Eat as a dip with crackers or wrap in low carb/fat tortillas and either eat cold or spritz with oil and air fry. 400, 3-4 minutes on each side. Delicious! Enjoy with pico!

Bubble Up Pizza



 Bubble Up Pizza 👌🏻

Gently Mix the 3 Following Ingredients 


1/2 C Greek Yogurt

1/3 C Self Rising Flour

1/2 tsp Italian Seasoning


Top with 

Pizza Sauce

3-4 oz Lean Ground Beef

Low Fat Mozzarella Cheese

Turkey Pepperoni 


Bake on bottom rack 400, for 15-20 minutes. 


Smash Burger Stuffed Flat Bread




 Smash Burger Stuffed Flatbread 

For the Smash Burger Sauce

1-2 TBsp Light Mayo

1 TBsp Ketchup 

1 tsp Mustard 

1/4 tsp Cajun Seasoning ( I used smoked paprika)


2 Low Carb Tortillas

1/2 C Lean Ground Beef (cooked with a bit of Aus Ju packet mix) 

Caramelized Onions

Bacon Bits

Crunchy Fried Onions

Shredded Cheese (divided)


Method:

On one tortilla spread a small amount of Smashburger sauce. Then add your toppings hamburger meat, caramelized onions, bacon bits, crunchy fried onions, and shredded cheese. Put second tortilla on top, put a tiny bit more sauce on the top of second tortilla, just enough, so the cheese will stick, then top with shredded cheese. The recipe I read calls for an air fryer at 375 for 5 to 7 minutes, mine only needed four minutes. This was AMAZING!! The different onions made them 👌🏻

Turkey Teriyaki Balls and Sauce

 

Turkey Meatballs:
1 pound ground turkey (94% lean)
1 large egg
¼ cup green onion, finely sliced
1 tbsp low sodium soy sauce
1/3 cup of panko bread crumbs
¾ tsp freshly grated ginger, very fine
1 tsp garlic powder
½ tsp onion powder
½ – 1 tsp salt
½ tsp ground black pepper
Mix All, then roll into balls

Teriyaki Sauce
3 tsp arrowroot starch, tapioca flour, or gluten-free cornstarch
½ cup cold water, divided
½ cup low-sodium soy sauce, use tamari or coconut aminos if gluten-free
1/3 cup fresh orange juice, juice from 1 – 2 oranges (or pineapple juice)
1 ½ tbsp rice vinegar
2 – 3 tbsp honey or maple syrup, based on your desired sweetness level
1 tsp sesame oil
1 ½ tsp fresh grated ginger, very fine (use fresh! I didn’t and it wasn’t good)
2 large garlic cloves, minced
1 tbsp sesame seeds (optional)
Instructions
Begin by dissolving the arrowroot starch in ¼ cup of cold water. Set this mixture aside.
In a medium-sized saucepan, combine the rest of the cold water, low-sodium soy sauce, fresh orange juice (or pineapple juice), rice vinegar, honey (or maple syrup), sesame oil, finely grated ginger, and minced garlic.
Place the saucepan on the stove and bring the mixture to a rapid boil.
Once the mixture is boiling, reduce the heat to a simmer on medium-low. Gradually whisk in the arrowroot starch water that you set aside earlier.
Simmer the sauce for 3-4 minutes, continually whisking until it thickens. Note that it will thicken more as it cools.
Stir in the sesame seeds (optional). Then, carefully taste the sauce and adjust the seasonings based on your preference.
Use the teriyaki sauce immediately or store it in the refrigerator for up to 5 days.
